Brussel Sprout Hash


INGREDIENTS:

1 Granny Smith Apple
6 Brussel Sprouts
1/2 cup dried Cranberries
1 Lemon

DIRECTIONS:

1. Trim Brussel Sprouts, then halve lengthwise, Thinly slice shreds.
2. Peel, core, and dice apple. Zest & half lemon. 
3. Heat a drizzle of olive oil in a pan over medium heat. Add brussel sprouts and apples. Cook until brussel sprouts are browned and apples are tender, 5-6 minutes, tossing occasionally. 
4. Stir in dried cranberries and a pinch of lemon zest, and squeeze lemon juice to taste. Season with salt and pepper!
